What You Can Do: Help increase access to food resources for food insecure Vermonters. Make sure that public areas (town offices, libraries, churches, community centers, etc.) post information on 2-1-1, 3SquaresVT, school meals, and local food shelves.

Last night we roasted a huge kabocha squash. It took some effort to chop it up. My husband had to use the meat cleaver to cut it in half, then we used a peeler and paring knife to remove the skin, and then we used a big steal kitchen knife to cube it. It roasted in the oven for an hour and it was delicious with a small bat of butter. We will have leftovers over the next few nights. We both love to cook so our kitchen is stocked with nice kitchen tools. However, what if we didn't have the time or tools to prepare this? Then what if we prepared it and we didn't like it? Lots to think about living on a limited food budget.
ReplyDeleteLast night I made a big batch of lasagna - hoping it will last me all week. I splurged on cheese for the lasagna, giving up meat instead. I tried to fill it full of greens and carrots so it had more than just cheese. I still have kale growing in my garden, which I'm letting myself harvest this week lest it go to waste. If I didn't have my garden, I would've used most of my produce budget for the week in one recipe. It was a reminder of how lucky I am to have a community garden near my apartment, and to have the time to plant and tend the garden. Gardening is certainly time consuming, which probably makes gardening impossible to many families.
